About us:
Brawn, a neighbourhood restaurant on London’s Columbia Road, opened in 2010 and is owned and operated by chef Ed Wilson alongside business partner and wife Josie Stead. The restaurant focuses on quality ingredient-led, seasonal cooking that compliments a discerning natural-leaning wine list, delivered with genuine warmth and hospitality.

The menu is inspired by the seasons with a deep respect for produce and a love of regional, life-affirming cooking. The wine list takes a democratic approach with much of the front of house being involved in its development. The space is pared back with a carefully curated art collection, and deep, rotating record playlist adding to the restaurant’s charm.

Since its opening, Brawn has gained a reputation as a unique and well-loved East London destination, where the relaxed environment and welcoming, knowledgeable team make it the very definition of neighbourhood dining. Brawn has also achieved a reach far beyond the boundaries of E2, hosting frequent collaborations with like-minded restaurateurs, chefs and winemakers from across the globe. Brawn continues to push boundaries with furthering their love of food, wine and music by collaborating with Gilles Peterson to put on two festivals each year – Ricci Weekender (Sicily) and the Brawnswood tent at We Out Here festival (Dorset).

Head Chef
Late June 2026

Job description:

We are excited to offer a full-time role for an experienced Head Chef to join the team, working closely with the owners in a fast-paced, quality-driven restaurant.

We are looking for a responsible, dedicated individual to assume ownership for the day-to-day running of the kitchen, working alongside the General Manager to further build upon the ongoing success of the restaurant.

The ideal candidate:

  • Has at least 2 years of working experience as a head chef in a similar standard of restaurant
  • Must be knowledgeable and passionate about food, ingredients, seasonality and cooking techniques and be able to transfer their enthusiasm on to the team
  • Has the skills and experience necessary to effectively help train, manage and grow teams
  • Have excellent attention to cleanliness, organisation and detail
  • A thorough understanding of current food hygiene regulations
  • Ability to remain calm in a fast-paced environment
  • Provide excellent and consistent customer experience

Responsibilities include:

  • Be responsible for the day-to-day running of the kitchen.
  • Recruitment and building a strong, structured team around them
  • Opening and closing duties
  • Preparing the kitchen and team for service
  • Maintaining the standards set in all areas of the kitchen from food production, cleaning and health & safety
  • Complete daily invoice work that’s required to obtain a maximum GP
  • Costing of dishes, inputting flash reports, managing budgets
  • Weekly stocktaking, stock and waste management
  • Working with Ed Wilson on developing new dishes and seasonal menus.
  • Heading up training and development of all kitchen staff
  • Produce weekly rotas and accurate timesheets, that staff adhere to and these are handed in on time each week for processing
  • Work with the General Manager and teams to ensure areas of concern are dealt with, particularly the safety side, fire alarm drills and testing, HACCPS etc
  • Suppliers – Continuing the relationships built over the years with our existing supplier network and ensuring the quality of the produce is always at the forefront of decision making. Working with an eye on costs to ensure we can use ingredients effectively and economically.
  • Sourcing – working with Ed and suppliers in sourcing the best examples of ingredients for the menu
  • Setting the standard with regards to the effective and efficient use of your time, for the kitchen teams to use as a benchmark for what is expected of them

Working Schedule:

  • 48 hours a week, based on 6 shifts a week, across 4-5 days

Assistant General Manager
June 2026

Job Description

Brawn is offering full-time role for an exceptional Assistant General Manager to join the Senior Management Team.

This role is integral to the success of the restaurant.  You will play a key role in shaping the culture, driving revenue, controlling costs, and continuously improving systems and service standards across the business. You are expected not only to maintain standards but to elevate them—bringing energy, ideas, and leadership that push the business forward while respecting its identity.

This is a proactive leadership role, one that requires the driving of standards, mentoring both management and front of house teams, and ensuring seamless collaboration between floor and kitchen. In the absence of the General Manager, the AGM assumes full responsibility for the restaurant’s operations.

The Ideal Candidate:

  • Has at least 2 years of management experience in a proven similar F&B environment
  • Must be knowledgeable and passionate about food, ingredients, seasonality and cooking techniques and be able to transfer their enthusiasm on to the team
  • Demonstrates strong leadership, initiative, and decision-making ability.
  • Is fastidious about standard, with exceptional attention to detail across all aspects of the business.
  • Is highly organised, commercially aware, and solutions driven.
  • Imbues enthusiasm, professionalism, and a passion for hospitality
  • Acts as a role model for the entire team

Responsibilities include:

  • Leading service and setting standards on the floor, especially during peak periods.
  • Driving team development, training, and day-to-day management of the front of house team.
  • Taking ownership of rotas, labour control, and helping manage costs effectively.
  • Being across stock, ordering, and general operational organisation.
  • Supporting recruitment and helping build a strong, stable team.
  • Acting as a reliable second-in-command to the GM, ensuring continuity in standards and decision-making.
  • Supporting the GM and Directors in all areas of the business where required.

Working Schedule:

  • 48 hours a week, based on 6 shifts a week, across 4-5 days

Experienced Waiter

Job Description

Brawn is offering a full-time role for an experienced waiter to join our growing team.

Our floor staff at Brawn should be ambassadorial, passionate and creative in the way they approach their day at work. They will be flexible, often being called on to move between working the floor, pass section; the bar and provide the calm, organised approach that customers and staff will expect and demand. We will provide training in each role within the restaurant, but it is expected that you would want to be flexible and multi-faceted in your position.

You will have a genuine interest in the food and wine of restaurants similar to ours, with an eye to educate themselves and others at every opportunity available. This thirst for knowledge will be met by Brawn, with regular in-house tastings with the kitchen and our wine suppliers. The ideal candidate will have at least two years of working experience in a proven similar restaurant environment, however this is not always a necessity if you are keen to learn and have a genuine interest.
