Working with the notoriously fussy Chiavennasca (known elsewhere as Nebbiolo) on terrifyingly steep granite terrain, vintages do not come easy for the Perego family. The grapes undergo a long, gentle maceration with the skins, before being pressed off to big old chestnut casks. A seriously approachable, elegant wine suitable, try with some alpine cheeses and crab apple jelly
