RAKOOKOO | Sweet & Sour Onion & Chilli Sambol



As the name says, a sweet, sour and spicy sambal that is both rich and lively.  An excellent and interesting substitute to ketchup or brown sauce.  Found in Sri Lankan Cooking. 🌶

SAMBAL is a condiment that is essentially a combination of pounded chillies and spices.  It is  fundamental to Malaysian, Singaporean & Indonesian cooking.  In Sri Lanka they have SAMBOL that will always be served with snacks and curries and is what makes it so unique and delicious; the cornerstone to their cuisine.


Typically goes with:
Sri Lankan dal/curry and lentil fritters

Works well with:
Bacon or sausage sarnie (instead of ketchup) | with pork chops | as a filling for curry puffs when mixed with potato

Recipe suggestion:
Pan fry mackerel and serve with sambol, toasted cashews, coriander and flatbread.
