These Sri Lankan spice mixes, available at Brawn Store, have been specifically developed with each curry type in mind. These are of course interchangeable and can be used in a variety of other ways. Use them as a meat rub, sprinkle into scrambled eggs, or mix through olive oil, lime and salt to dress up your greens.

Turmeric, Cumin Seeds, Coriander Seeds, Fennel Seeds, Mustard Seeds. Cardamom, Fenugreek, Amchoor, Chilli Powder, Pepper, Cinnamon, Garlic Powder, Rice Powder

 

SPICE MIX for CHICKEN CURRY

Turmeric, Cumin Seeds, Coriander Seeds, Fennel Seeds, Mustard Seeds. Cardamom, Fenugreek, Chilli Powder, Pepper, Cinnamon, Clove, Paprika, Mace, Pandan Leaf, Garlic Powder, Rice Powder

VEGETARIAN CURRY

Sauté 1 diced onion and 2 tsp each of garlic, ginger and green chilli with a good pinch of salt, in 3 Tbsp of oil/ghee for a few minutes over low heat. Add 2 Tbsp of spice mix and continue to cook for a few more minutes.  Add diced vegetables and a tin of coconut milk.  When vegetables are cooked, take off the heat and season with lime, tsp of sugar and more salt and chilli if desired. Serve with fresh coriander and steamed rice.  Serves 2.

 

SEAFOOD CURRY

Serve with fresh coriander and steamed rice.  Serves 2.
