Said to have been inspired by attending a conference by the great Nicolas Joly, Silvio redirected his entire family vineyard and converted to biodynamics back in 2003. Although his sangiovese plots all lie within the Chianti Classico region, he eschews the attribution in favour of working to his own set of (stricter) farming rules. This has got late night lasagne all over it.
