Jean-Christophe was a sommelier first, then left to study winemaking in the Loire. He worked under Mark Angéli (La Lune) before setting out for a patch of his own. JC walked away from that apprenticeship with more than just knowledge though. He inherited an old basket press, which he still uses to gently tease out flavours to this day.
The Chenin vines grow on schist, limestone and marl – the distinctive terroir of the Layon valley. All of his whites spend a long time pressing softly so as to extract the juice gently – there can be a delicate oxidative quality that adds to the complexity & intrigue.
