Barolo Salami

This is the perfect salami; small enough to fit in your handbag but (perhaps) large enough to last a few days. Taste the nutmeg that is used in the seasoning together with Barolo wine and a touch of garlic. And, while you wouldn’t know it from the taste, a bit of honey is added as a natural way to kick start the fermentation process in the meat without using artificial starters.
